Ground Meat and Bacon Stew by Bear Claw

The debate may go on for years as to whether this is a stew or soup.  Some people think a stew has to have a thicker "gravy" base.  Doesn't matter, it eats GOOD, and if you cook it down, especially with the okra in it, there is little juice left in it.  A great weekend meal that will last a long time.

1 3/4 lb ground venison or low fat hamburger meat (or, you can mix 50/50 as you like)
8 slices of bacon, cut about 2" to 3" long
1 large onion sliced into small strips
5 medium red potatoes cut into disks with the skin on
3 bay leaves
2 yellow squash, cut into 1/2" "coins"
4 celery stalks cut into 3/4 inch lengths
1 large yellow bell pepper (cut out stem and cut pepper into strips)
1 large orange bell pepper (cut out stem and cut pepper into strips)
2 cups baby carrots or regular carrots peeled and cut into 2" to 3" lengths
3 fresh okra pods, soft and green, cut into 1/2" rounds
1 cup frozen corn (or use a can of corn)
1 or 2 cans of stewed tomatoes (to taste)
approximately 1 quart of water
2 tsp season salt
2 tsp fresh ground pepper
1 tsp ground comino
1/2 tsp Basil leaves
4 small red dried peppers, or 1 large dried Hatch chili (pull out the stem and wash)

Fry up bacon in a large stew pot (4 or 5 quart) or Dutch oven, until fat is transparent and bacon is lightly fried, then put ground meat in pan with bacon and fat and continue to fry and chop the meat until burger meat is uniformly grey and small chunks.
Put cut up onion on frying meat mixture, stir in and allow to continue frying until burger is light brown and onion transparent.
Put season salt, ground pepper, bay leaves, and dried peppers in the mixture, and add 1 qt. water.
Put vegetables in, and allow to simmer covered for 3 hours, then put in canned tomatoes and bring back to simmer.

Serve with fresh cornbread and thick slices of a good strong cheddar cheese, or pepper jack, if you like.
